Microgreen Wrap

Nothing shouts “lunch time!” like a refreshing wrap, especially when it’s loaded with nutrient-dense microgreens! Today we’re sharing a simple way to make a veggie wrap, using three ingredients for the filling: microgreens, cucumber, and dairy-free cheese. ALL of which are locally grown or made!

Our member farm, Micro YYC, is our microgreen specialist. They celebrated their sixth birthday this year! Owner Vanessa, started the business on a couple of shelves in her basement in 2015 and in six years has expanded into a commercial space and a growing team of employees, selling weekly to restaurants, grocery stores, and markets!

There are a lot of microgreens and shoots to choose from. Each offers a very different flavour profile, from sweet to lemony to nutty to spicy. Fully mature broccoli has a completely different nutritional make-up than radish. So too do these microgreen varieties, although they are all considered high in vitamins, minerals, and antioxidants. In fact, studies have shown that microgreens actually have significantly higher nutrient densities than their mature leaves! That makes them a great healthy option to add into your daily eating.

Refreshing Microgreen Wrap

  1. Spread a decent amount of of Herb & Garlic Macadamia Cheese onto wrap
  2. Cut a length of cucumber about 4” long
  3. Using a vegetable peeler, carefully cut the cucumber into thin slices & place onto wrap
  4. Gently rinse the microgreens & pile onto cucumber (the more the merrier)
  5. Enjoy!

Do you have a favourite microgreen variety? We’d love to hear (leave a comment)!
